  • 2 tablespoons olive oil
  • Juice of ½ a lemon
  • 1 teaspoon kosher salt
  • ¼ teaspoon coarse black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat your grill to high heat (about 425°F).
  2. In a mixing bowl, combine the zucchini, olive oil, lemon juice, salt, pepper, garlic powder, and red pepper flakes. Toss until evenly coated.
  3. Brush the grill grates with oil to prevent sticking. Place the zucchini cut-side down on the grill.
  4. Grill for about 3 minutes until char marks form. Flip and grill for another 3 minutes until tender.
  5. Remove from the grill and garnish with chopped parsley and a squeeze of lemon if desired before serving.
