  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a pot, combine rinsed quinoa and vegetable broth; bring to boil. Reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed. Let sit covered for 5 minutes before fluffing.
  2. While quinoa cooks, chop the peppers, avocado, onion, and halve the cherry tomatoes. Place in a large mixing bowl.
  3. Once quinoa has cooled slightly, add to the bowl with chopped vegetables along with black beans and corn. Gently fold to combine.
  4. In a separate bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.
  5. Pour dressing over salad mixture; toss gently until everything is coated.
  6. Serve immediately or refrigerate for at least one hour to allow flavors to meld.
