  • 3 scallions, thinly sliced
  • ¼ cup chopped cilantro
  • 2 shiso leaves (optional)
  • 1 ½ tablespoons fresh lime juice
  • 1 ½ tablespoons honey or agave
  • ½ teaspoon very finely minced ginger
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons soy sauce (or GF liquid amino acids)
  • Salt and pepper to taste
  • Toasted sesame seeds for garnishing
  • Few slices jalapeño (optional)

Instructions

  1. In a large mixing bowl, combine watermelon, cucumber, scallions, and cilantro.
  2. In a small bowl, whisk together lime juice, honey/agave, minced ginger, sesame oil, and soy sauce until well blended.
  3. Pour the dressing over the salad mixture and gently toss until evenly coated.
