  • 10 oz pasta (fusilli or whole wheat)
  • 1 cucumber (diced)
  • 1 pint tomatoes (halved)
  • 1.5 cups spinach (roughly chopped)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled or goat cheese)
  • 1/4 cup Kalamata olives (pitted and halved)
  • 1/4 cup olive oil
  • 3.5 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1.5 tsp oregano
  • 1 tsp dried mint
  • 2 cloves garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp red pepper flakes (optional)

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, prepare the vegetables: dice the cucumber, halve the tomatoes, chop the spinach, and slice the red onion.
  3. In a mixing bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, oregano, dried mint, minced garlic, salt, black pepper, and optional red pepper flakes until smooth.
  4. In a large bowl, combine cooked pasta with prepared vegetables and feta cheese. Add Kalamata olives.
  5. Pour the dressing over the salad and toss gently until evenly coated.
  6. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
