  • 3 whole peaches (grilled)
  • 1/2 cup chopped pistachios
  • 3 ounces ricotta cheese
  • 1/4 cup honey
  • 1/4 cup white balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 shallot (minced)

Instructions

  1. In a skillet over medium heat, cook diced turkey strips until crispy, about 10 minutes. Drain excess fat.
  2. Prepare tortellini according to package instructions; drain and rinse with cool water.
  3. In a large bowl, combine cooked tortellini, crispy turkey strips, and halved grilled peaches. Drizzle homemade vinaigrette (mix honey, vinegar, olive oil, and shallot) over the top and toss gently.
  4. Top with crushed pistachios and dollops of ricotta cheese. Serve immediately or chill for later.
