  • 6 hard-boiled eggs
  • 8 ounces small pasta (ditalini, small penne, or elbow macaroni)
  • 3/4 cup mayonnaise
  • 1 1/2 tablespoons dijon mustard
  • 1 teaspoon white vinegar or freshly squeezed lemon juice
  • 1 clove garlic (minced)
  • 1/2 teaspoon kosher salt (to taste)
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons finely diced red onion
  • 2 tablespoons sliced green onions

Instructions

  1. Cook the pasta according to package instructions until al dente; drain and rinse under cold water.
  2. Peel and chop the hard-boiled eggs. In a mixing bowl, combine eggs with mayonnaise, dijon mustard, vinegar or lemon juice, garlic, salt, smoked paprika, and cayenne pepper; mix until smooth.
  3. Add cooled pasta to the egg mixture and gently fold in diced red onion and sliced green onions until evenly distributed.
  4. Transfer to a serving dish; garnish with additional green onions if desired. Chill before serving.
