Instructions

  1. In a blender, combine ½ cup of sliced strawberries with lemon juice and ½ cup of water (omit water if using cornstarch). Blend until smooth.
  2. In a pot, mix sugar with quick-cooking tapioca (or cornstarch) and a pinch of salt. Pour in the blended strawberry juice and stir well.
  3. Heat the mixture over medium heat until boiling. Lower heat to simmer, stirring frequently until thickened (about 5 minutes). If using cornstarch, skip simmering; proceed once it thickens after boiling.
  4. Stir in remaining sliced strawberries and cook until it simmers again. Turn off the heat.
  5. Transfer the filling to a wide container to cool quickly before storing in a jar.
