  • 1 tablespoon dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon olive oil
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. Cook the orzo according to package directions; rinse and drain.
  2. In a large bowl, combine cooked orzo with diced chicken, spinach, roasted red pepper, sliced green onion, cherry tomatoes, basil, and goat cheese.
  3. For the vinaigrette, whisk together vinegar, mustard, honey (or syrup), olive oil, salt, and pepper in a small bowl.
