  • 2 tablespoons extra-virgin olive oil
  • 6 garlic cloves, minced
  • 1 pound Cremini mushrooms, sliced
  • 2¼ cups half-and-half
  • 1 pound pasta of choice
  • 8 ounces fresh spinach
  • 1 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta until just under al dente according to package instructions. Reserve about 1 cup of pasta water, then drain the pasta.
  2. While the pasta cooks, heat the olive oil in a deep skillet over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the sliced mushrooms and season with salt and pepper. Cook for 6 to 8 minutes, stirring occasionally, until the mushrooms are golden brown and tender.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Pour in the half-and-half and bring the mixture to a gentle simmer. Cook for 3 to 4 minutes until the sauce begins to thicken slightly.
  7. Add the drained pasta to the skillet along with the Parmesan cheese. Toss everything together until the pasta is evenly coated in the creamy sauce.
  8. Add reserved pasta water a little at a time if needed to loosen the sauce to your desired consistency.
  9. Taste and adjust seasoning with additional salt and pepper if needed. Serve warm
