  • 1 (12-16 oz.) bag frozen spinach, thawed
  • 1 cup plain whole-milk Greek yogurt
  • 1/2 cup mayonnaise (avocado oil mayo recommended)
  • 2 garlic cloves, grated
  • 1 cup sliced pepperoncini peppers, roughly chopped
  • 1 1/2 cups grated fresh mozzarella cheese, divided

Instructions

  1. Preheat your oven to 400ºF and grease an 8×8-inch baking dish.
  2. In a large mixing bowl, crumble the feta cheese using a fork. Squeeze excess moisture from the thawed spinach and add it to the bowl.
  3. Incorporate Greek yogurt, mayonnaise, grated garlic, red pepper flakes (to taste), chopped pepperoncini peppers, and 1 cup of mozzarella cheese into the mixture. Stir until well combined.
  4. Spread the mixture into the prepared baking dish and top with the remaining mozzarella cheese.
  5. Bake for 26 to 30 minutes until bubbly and golden brown at the edges. For extra browning, broil for an additional 2 minutes.
