  • 1 lb penne pasta
  • 5 oz baby spinach
  • 1/2 C sun-dried tomatoes, finely chopped
  • 1 C smoked mozzarella, cubed
  • 1 C shredded parmesan cheese
  • 3/4 C mayo
  • 1/2 Tbsp apple vinegar
  • 2 cloves minced garlic
  • 2 pinches cayenne pepper
  • 1/8 tsp salt
  • 1/2 tsp sugar
  • 1/8 tsp black pepper
  • 2 Tbsp milk

Instructions

  1. Cook the penne pasta according to package directions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, whisk together mayo, apple vinegar, minced garlic, cayenne pepper, salt, sugar, and black pepper until smooth.
  3. Add the cooked pasta, baby spinach, sun-dried tomatoes, smoked mozzarella, and parmesan to the dressing. Gently fold until evenly coated.
  4. Chill in the refrigerator for at least one hour before serving.
