  • 2 pounds large shrimp (peeled and deveined)
  • 1 fresh pineapple (chopped into 1” pieces)
  • 3 bell peppers (cut into 1 1/4-inch pieces)
  • 1 red onion (cut into 1-inch chunks)
  • 5 tablespoons olive oil (divided)
  • 1 teaspoon cornstarch
  • 1/3 cup red apple vinegar
  • 1/4 cup canned pineapple juice
  • 1/4 cup sugar
  • 1/4 cup honey
  • 2 tablespoons ketchup
  • 1 tablespoon reduced sodium soy sauce
  • 1 teaspoon salt
  • 1/2 tsp EACH garlic powder, ginger powder
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a medium bowl, whisk together marinade ingredients and reserve some for veggies. Marinate shrimp for 30 minutes.
  3. Toss chopped pineapple and vegetables in the remaining marinade.
  4. Thread shrimp and veggies onto skewers.
  5. Grill or bake until cooked through.
