  • 1 medium head of cauliflower (about 1 lb), cut into florets
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • ¼ cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss the cauliflower florets with olive oil, ground cumin, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet lined with parchment paper and roast for 25-30 minutes until golden brown.
  4. In another bowl, toss drained chickpeas with olive oil and seasonings of your choice.
  5. After 15 minutes of roasting the cauliflower, add chickpeas to the tray and continue roasting for an additional 10-15 minutes until both are crispy.
  6. Let cool slightly before transferring everything into a large bowl. Mix in freshly squeezed lemon juice and chopped parsley before serving.
