  • 1/3 cup (75 g) unsalted butter, cut into small pieces
  • ½ cup (100 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup plus 2 tablespoons (125 g) all-purpose flour
  • ¼ teaspoon salt
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (180°C). Line an 8×8-inch baking pan with foil, leaving an overhang.
  2. In a medium heat-proof bowl, melt white chocolate and butter over simmering water until smooth. Transfer to a large mixing bowl.
  3. Stir in granulated sugar. Then add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Sift together flour and salt; fold into the batter just until combined. Gently fold in fresh raspberries.
  5. Pour batter into the prepared pan and smooth the top. Bake for 17-20 minutes until golden brown; a toothpick inserted should come out with moist crumbs.
  6. Cool completely on a wire rack before lifting out using the foil overhang; cut into squares.
