  • 1/4 cup + 2 tablespoons creamy peanut butter (melted and slightly cooled)
  • 1/4 cup + 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips
  • 1/4 cup ground peanuts or ground almonds (to roll the balls in)

Instructions

  1. In a large mixing bowl, combine rolled oats, ground flaxseed, chopped almonds, chia seeds, salt, and cinnamon; mix well.
  2. In a microwave-safe bowl, melt peanut butter for about 30 seconds until smooth; let it cool slightly before mixing in honey and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and mix thoroughly using a spoon and your hands until sticky. Fold in mini chocolate chips if desired.
