  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 cup graham cracker crumbs
  • 1/3 cup white chocolate chips
  • Optional: orange food coloring
  • Granulated sugar for rolling
  • Chocolate chips for topping

Instructions

  1. In a non-stick skillet over medium heat, melt the butter and mix in the cream cheese until smooth. Add pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir continuously until thickened.
  2. Mix in graham cracker crumbs and white chocolate chips until fully incorporated. If desired, add food coloring to enhance appearance.
  3. Transfer the mixture to a greased baking sheet and spread evenly. Refrigerate for about 2 hours or overnight until firm.
  4. Rub butter on hands and roll chilled mixture into small balls.
  5. Roll each ball in granulated sugar for coating.
  6. Use a toothpick to create ridges on the sides of each truffle and top with chocolate chips.
