  • 1 pound chicken breast, cut into bite-sized cubes
  • 1 cup pineapple chunks, fresh or canned, well drained
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly grated ginger
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until golden brown and cooked through. Remove from skillet.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until soft.
  3. Stir in pineapple chunks and cook for about 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low, cover skillet, and simmer for 18–20 minutes until rice is tender.
  6. Return chicken to skillet; stir gently to combine and heat through.
  7. Garnish with sliced green onions and sesame seeds before serving.
