  • 2 tbsp olive or sesame oil
  • 2 garlic cloves (minced)
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • 1/4 cup green onions (chopped)

Instructions

  1. Heat oil in a skillet over medium heat. Add diced chicken and sauté until fully cooked, about 7-10 minutes. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar.
  3. Mix cornstarch with water until smooth, then add to the pan. Cook for an additional 2-3 minutes until thickened.
  4. Return cooked chicken to the skillet along with pineapple chunks and diced red bell pepper. Stir gently to combine.
  5. Add cooked rice to the skillet and mix thoroughly until heated through.
  6. Top with chopped green onions, sesame seeds, or red pepper flakes if desired.
