  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown. Remove from heat and set aside.
  2. In the same skillet, sauté onion until translucent, then add garlic until fragrant, followed by red bell pepper until softened.
  3. Stir in the cubed pineapple and cook for about 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil then reduce heat to low; cover and simmer for 18-20 minutes or until rice is fully cooked.
  5. Return the cooked chicken to the skillet and stir well. Heat through for another 2-3 minutes.
  6. Serve warm garnished with sliced green onions and sesame seeds.
