  • 1/4 tsp kosher salt
  • 1 cup vegan marshmallow fluff
  • 1/4 cup creamy peanut butter, warmed
  • 1/2 cup milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together peanut butter, softened unsalted butter, granulated sugar, and brown sugar until fluffy. Add the egg and vanilla extract; mix well.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients until combined.
  4. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them apart. Flatten each with a fork in a crisscross pattern.
  5. Bake for 10–12 minutes until edges are golden. Cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
  6. Melt chocolate chips in intervals until smooth. Assemble cookies by spreading marshmallow fluff and warmed peanut butter on one cookie base, drizzling with melted chocolate before topping with another cookie.
