  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup sour cream, room temperature
  • 1½ cups fresh peaches, peeled & sliced
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 6 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13 inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until evenly moistened. Press this mixture firmly into the bottom of your prepared baking pan.
  3. In a large bowl, beat together cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined. Pour this cheesecake filling over your crust.
  4. In another bowl, combine sliced peaches with flour, granulated sugar, cinnamon, and nutmeg. Toss gently to coat all peach slices evenly. Sprinkle this mixture over the cheesecake layer. Dot the top with small pieces of cold butter.
  5. Bake in your preheated oven for 45-50 minutes. The cheesecake should be set with a golden-brown topping. Allow cooling completely before cutting into bars.
