  • 2 large peaches (about 300 grams peeled and chopped)
  • ½ tablespoon lemon juice
  • ¾ teaspoon pure almond extract
  • 210g (1½ cups) all-purpose flour
  • 2½ teaspoons baking powder
  • 1 to teaspoons cinnamon
  • 2 large eggs (room temperature)
  • 105g (½ cup) granulated sugar
  • 115g (½ cup) melted butter (cooled)
  • 120g (½ cup) milk (room temperature)

Instructions

  1. Preheat your oven to 350°F (177°C). Grease an 8½ x 4½ inch loaf pan and line it with parchment paper.
  2. Peel and chop the peaches into cubes, then mix them with lemon juice and almond extract in a small bowl.
  3. In a large mixing bowl, whisk together flour, baking powder, cinnamon, and optional salt.
  4. In another bowl, combine eggs and granulated sugar; whisk until blended. Add milk and melted butter; stir until mixed.
  5. Pour the wet ingredients into the dry ingredients; gently mix until just combined.
  6. Fold in the peach mixture until evenly distributed.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for about 44-48 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for half an hour before transferring to a wire rack.
