  • 2 tablespoons olive oil, divided
  • 1 pound lean ground beef
  • 1 1/2 cups chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 3 (8 oz) cans tomato sauce
  • 2 (14.5 oz) cans low-sodium chicken broth
  • 1/2 cup water (plus more as needed)
  • 1 (15 oz) can diced tomatoes
  • 2 teaspoons granulated sugar
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • Salt and freshly ground black pepper, to taste
  • 1 cup dry ditalini pasta
  • 1 (15 oz) can dark red kidney beans, drained and rinsed
  • 1 (15 oz) can great Northern beans, drained and rinsed
  • 3 tablespoons fresh parsley, minced

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Brown the ground beef, breaking it apart as it cooks. Drain excess fat.
  2. Add the remaining olive oil, then sauté onion, carrots, and celery for about 6 minutes until softened. Stir in garlic and cook for another minute.
  3. Mix in the tomato sauce, diced tomatoes, chicken broth, water, sugar, and dried herbs. Return the beef to the pot and season with salt and pepper. Bring to a boil, then reduce heat to simmer for 15–20 minutes.
  4. Cook ditalini pasta separately until just shy of al dente; drain well.
  5. Stir cooked pasta and beans into the soup mixture for another two minutes on simmer. Adjust consistency with additional water if needed.
  6. Garnish with fresh parsley before serving hot.
