  • 1/2 cup oil-packed sun-dried tomatoes, drained
  • 1 pound boneless chicken breasts or thighs, cubed
  • Salt and black pepper, to taste
  • 4 teaspoons Italian seasoning
  • 2 tablespoons salted butter
  • 2 cloves garlic, chopped
  • 3/41 pound short cut pasta
  • 2 cups whole milk
  • 2 ounces cream cheese
  • 2 cups chopped baby spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fresh chopped basil for garnish

Instructions

  1. In a large pot over medium-high heat, cook the drained sun-dried tomatoes with the cubed chicken seasoned with salt, pepper, and 2 teaspoons of Italian seasoning for about 5 minutes until cooked through. Remove and set aside.
  2. In the same pot, melt the butter and sauté garlic with the remaining Italian seasoning for about 2 minutes until fragrant. Add the pasta and water; stir frequently until al dente (about 8 minutes).
  3. Stir in milk, cream cheese, and Parmesan until creamy.
  4. Return the chicken to the pot along with spinach and sun-dried tomatoes; gently mix everything together. Remove from heat and add fresh basil.
  5. Serve immediately with extra Parmesan on top.
