  • 1/2 cup chopped celery
  • 1/2 cup chopped sweet onion
  • 1/4 cup sliced green olives (pimento stuffed)
  • 1 cup mayonnaise
  • 1 1/2 tablespoons yellow mustard
  • Salt and pepper to taste
  • 2 hard-boiled eggs (for garnish)
  • Paprika (for garnish)

Instructions

  1. Rinse potatoes and remove any bad spots; keep the skins on.
  2. Place potatoes in a large saucepan and cover with cold water. Bring to a boil and cook until tender, about 30 – 45 minutes.
  3. Drain the potatoes in a colander and allow to cool slightly.
  4. Chop celery and onion; add them to a large mixing bowl.
  5. Once cool enough to handle, cut the potatoes into chunks directly into the bowl.
  6. Add mayonnaise, mustard, and olives; gently fold together.
  7. Taste and adjust seasoning as necessary.
  8. Garnish with sliced hard-boiled eggs if desired, then refrigerate for at least an hour before serving.
