  • 1 ½ cups all-purpose flour
  • 4 tablespoons granulated sugar
  • ½ teaspoon fine sea salt
  • 12 tablespoons unsalted butter (cold)
  • 3 tablespoons milk
  • ½ cup homemade vanilla pudding
  • 2 cups assorted fresh fruit (berries, kiwi, grapes, cherries, peaches)
  • 2 tablespoons apricot preserves (optional)

Instructions

  1. In a food processor, combine flour, sugar, salt, and cold butter. Pulse until the mixture resembles coarse meal. Gradually add milk until the dough forms a ball.
  2. Portion dough into mini muffin tin wells and press evenly to shape tart shells. Chill for at least 30 minutes.
  3. Preheat oven to 350°F. Prick each shell's bottom and bake for 13-16 minutes until golden. Cool on a wire rack.
  4. Fill cooled shells with vanilla pudding and top with fresh fruit.
  5. Optionally glaze with melted apricot preserves for added shine.
