  • 1 ripe mango (julienned)
  • 2 cups shredded cabbage
  • 6 baby bell peppers or 1 red bell pepper (julienned)
  • 1 jalapeño pepper (julienned)
  • ⅓ cup chopped mint or cilantro
  • ¼ cup sesame oil
  • 1 tsp kosher salt
  • 1 Tbsp rice vinegar
  • 1 Tbsp lime juice
  • ½ Tbsp honey or granulated sugar
  • 1 Tbsp sesame seeds
  • 1 Tbsp coconut aminos

Instructions

  1. In a bowl, whisk together the dressing ingredients: sesame oil, salt, rice vinegar, lime juice, honey (or sugar), sesame seeds, and coconut aminos until well blended.
  2. In a large mixing bowl, combine the julienned cucumber, mango slices, shredded cabbage, baby bell peppers, and jalapeño.
  3. Pour the dressing over the vegetable mixture and gently toss until everything is well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving for optimal flavor.
