  • 2 1/4 cups all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon kosher salt
  • 1/3 cup freeze-dried blueberries, chopped
  • 1/4 cup course sanding sugar, for topping

Instructions

  1. In a stand mixer bowl, combine sugars and lemon zest. Massage the zest into sugars for enhanced flavor.
  2. Add room temperature butter; mix until light and fluffy.
  3. Incorporate egg and vanilla extract; mix on low until combined.
  4. In another bowl, whisk together flour, baking soda, cream of tartar, and salt. Gradually add to the butter mixture.
  5. Gently fold in freeze-dried blueberries.
  6. Chill dough for 30 minutes, then scoop onto lined baking sheets.
  7. Bake at 350°F for 8–9 minutes until edges are golden and centers are puffy.
  8. Allow cooling on racks before serving.
