  • 1 lb flank steak
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cup cucumber, thinly sliced
  • 1 cup carrots, julienned
  • 1 avocado, sliced
  • 2 green onions, chopped
  • Sesame seeds for garnish
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a medium bowl, whisk together soy sauce, sesame oil, brown sugar, garlic, ginger, rice vinegar, and optional red pepper flakes.
  2. Place flank steak in a resealable bag; pour marinade over it and refrigerate for at least 30 minutes or up to 4 hours.
  3. Cook rice according to package instructions.
  4. Heat a grill pan over medium-high heat. Remove steak from marinade (discard excess) and cook for about 4-5 minutes on each side for medium-rare.
  5. Allow the steak to rest for 5-10 minutes before slicing against the grain.
  6. Assemble bowls with cooked rice as the base; top with sliced steak, kimchi, cucumbers, carrots, avocado, and green onions.
