  • 3 pounds beef bones
  • 1/2 onion, quartered
  • 4-inch piece of ginger, sliced
  • 1 cinnamon stick
  • 46 star anise
  • 1 tablespoon salt
  • 1 pound boneless strip steak, thinly sliced
  • 9 oz hearts of palm noodles
  • 1 cup broccoli, chopped
  • 1/4 onion, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 4 mushrooms, thinly sliced

Instructions

  1. In a pressure cooker, combine beef bones, quartered onion, ginger, cinnamon stick, star anise, salt, and enough water to fill to the max line.
  2. Cook on high pressure for 1.5 hours. Allow pressure to release naturally for 15 minutes before releasing any remaining pressure.
  3. Strain the broth using a strainer to remove solids.
  4. Keep the broth simmering while you prepare your pho bowls by adding hearts of palm noodles and desired vegetables.
  5. Top each bowl with thin slices of boneless strip steak and serve hot.
