  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1.5 tsp garlic powder
  • 2.5 tsp oregano

  • 1.25 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp red pepper flakes
  • 1 cup Greek yogurt
  • 1/2 cup cucumber (grated and squeezed of excess liquid)
  • 1.5 tbsp lemon juice
  • 1.5 tbsp olive oil
  • 1.5 tsp garlic (finely minced)
  • 1/2 tsp salt
  • 1 tbsp dill (freshly chopped)
  • 2 cups cooked rice
  • 2.5 cups tomatoes (diced)
  • 2 cups cucumber (diced)
  • 4 cups lettuce (torn or chopped)
  • 1 cup red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Start by combining olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes in a mixing bowl. Add the chicken pieces to the marinade and mix well. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.
  2. In another mixing bowl, combine Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and dill. Stir until well mixed. Taste and adjust seasoning if needed. Refrigerate until ready to serve.
  3. Heat a non-stick skillet over medium-high heat. Once hot, add the marinated chicken pieces in a single layer. Cook for about 7–10 minutes or until cooked through and golden brown on all sides.
  4. Divide cooked rice among four bowls as a base layer. Top each bowl with cooked chicken pieces followed by diced tomatoes, diced cucumber, torn lettuce leaves, sliced red onion, crumbled feta cheese, and a generous dollop of tzatziki sauce.
  5. Sprinkle fresh parsley over each bowl for an extra burst of flavor. Serve immediately while warm or enjoy cold as leftovers.
