  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 packets unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • Pan spray

Instructions

  1. Prepare all fruits by washing and cutting them into uniform sizes.
  2. Lightly pan spray the bundt pan and wipe it down with a paper towel.
  3. Combine 1 cup of apple juice with vegan gelatin in a medium bowl and set aside.
  4. In a saucepan, boil the remaining apple juice with sugar and lemon juice until dissolved. Pour over the gelatin mixture and whisk until smooth.
  5. Layer the fruits in the bundt pan in the following order: raspberries, mangoes, strawberries, green grapes, red grapes.
  6. Pour the cooled gelatin mixture over the fruits until fully covered and refrigerate for 3-4 hours until set.
  7. To serve, unmold the cake by briefly placing it in warm water before flipping onto a serving plate.
