  • 1 cucumber, peeled and quartered
  • 1 pint cherry tomatoes, halved
  • 6 oz black olives, drained and halved
  • 1 orange bell pepper, chopped
  • 2 tablespoons chopped pepperoncini
  • 8 oz fresh mozzarella balls, quartered
  • 8 oz sliced turkey slices, chopped
  • Italian dressing (homemade)

Instructions

  1. Prepare the Italian dressing according to your recipe and refrigerate until ready to use.
  2. Boil salted water in a pot. Cook the tortellini until al dente as per package instructions; drain and rinse with cool water.
  3. In a large serving bowl, mix half of the dressing with the warm tortellini. Add cucumber, cherry tomatoes, olives, bell pepper, pepperoncini, mozzarella balls, and turkey slices; toss gently.
