  • 2 medium Onions (minced)
  • 2 tbsp Breadcrumbs (gluten-free if needed)
  • 1 tsp Baking Soda
  • 1 cup Fresh Herbs (parsley, mint, coriander)
  • 2 tbsp Olive Oil (extra virgin)
  • 0.5 tsp Salt
  • Black Pepper (to taste)
  • 6 medium Potatoes (cut into wedges)
  • 2 tbsp Olive Oil (for roasting)
  • 0.5 tsp Cumin
  • 0.5 tsp Paprika
  • 0.5 tsp Dried Oregano
  • 1 cup Greek Yogurt (thick)
  • 0.5 Cucumber (grated and squeezed)
  • 1 clove Garlic (minced)
  • 1 tbsp Lemon Juice
  • 0.3 cup Fresh Dill or Mint (chopped)
  • 2 cups Crisp Lettuce Leaves (chopped)
  • 2 medium Tomatoes (chopped)
  • 2 Cucumbers (chopped)
  • 0.5 Red Onion (chopped)
  • 0.5 cup Kalamata Olives (halved)
  • 2 tbsp Olive Oil (for dressing)
  • 1 tbsp Lemon Juice (to balance flavors)
  • Extra Fresh Herbs (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss potato wedges with olive oil, salt, cumin, paprika, and oregano. Spread on a baking sheet and roast for 25–30 minutes until golden.
  2. In a mixing bowl, combine ground beef, garlic, onions, breadcrumbs, baking soda, herbs, olive oil, salt, and pepper. Mix gently and shape into meatballs.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs in batches until browned on all sides and cooked through.
  4. For tzatziki sauce: mix Greek yogurt with grated cucumber, minced garlic, lemon juice, dill or mint, salt, and pepper in a bowl.
  5. Assemble bowls starting with lettuce leaves topped with roasted potatoes, meatballs, tomatoes, cucumbers, and tzatziki sauce.
