  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup Irish barley tea
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 cup chicken broth
  • 1 tablespoon butter
  • Fresh parsley, for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and keep warm.
  3. In the same skillet, reduce heat to medium and sauté onions until translucent, about 3-4 minutes. Add garlic and cook for an additional minute.
  4. Pour in the barley tea, scraping up browned bits from the pan, and simmer for about 5 minutes.
  5. Stir in chicken broth and simmer for another 5 minutes. Reduce heat to low; gradually add heavy cream while stirring continuously.
  6. Mix in Dijon mustard and thyme; simmer until thickened for about 3-4 minutes.
  7. Return chicken to skillet, spooning sauce over it, and simmer for an additional 2-3 minutes.
  8. Stir in butter until melted; serve garnished with parsley.
