  • 1 cup Boiling Water
  • 2 cups Fresh Strawberries
  • 8 ounces Dark Chocolate (or semi-sweet chocolate)
  • 2 tablespoons Coconut Oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla until smooth. Gradually add this mixture to the dry ingredients.
  4. Slowly stir in boiling water until you have a smooth batter.
  5. Divide the batter between the prepared pans and bake for about 30–35 minutes or until a toothpick comes out clean.
  6. Let the cakes cool before preparing the strawberry filling by slicing strawberries and tossing them with lemon juice.
  7. Melt dark chocolate with coconut oil until smooth.
  8. Assemble the cake by layering one cake layer with strawberries, topping it with the second layer, and pouring melted chocolate over it.
