  2. Place the lemon zest in a large glass jar and pour in high-proof lemon juice until submerged. Seal tightly and store in a cool dark place for 7 to 30 days, shaking occasionally.
  3. After infusion, combine water and sugar in a saucepan over low heat, stirring until dissolved. Let cool completely.
