  • ½ cup whole milk
  • 5 tablespoons unsalted butter
  • 6 tablespoons granulated sugar
  • 2 tablespoons light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 ¼ teaspoons instant yeast
  • 4 cups + 1 tablespoon bread flour
  • ¼ cup all-purpose flour
  • 1 ½ teaspoons fine sea salt
  • 1 egg (lightly beaten)
  • 2 tablespoons water
  • 1 tablespoon salted butter

Instructions

  1. In a stand mixer bowl, combine pineapple juice, milk, melted butter, sugars, eggs, vanilla extract, and yeast.
  2. Add all-purpose flour and 2 cups of bread flour; mix until rough dough forms. Stir in sea salt.
  3. Knead on medium-high speed for 4 to 5 minutes while gradually adding remaining flour until smooth.
  4. Place dough in a greased bowl, cover with plastic wrap, and let rise for about 1½ hours until doubled.
  5. Spray a 9×13-inch pan with cooking spray; deflate dough and divide into 15 pieces. Shape into balls and place in the pan.
  6. Brush with egg wash; cover and let rise again for about 1 hour.
  7. Preheat oven to 375°F; bake for about 20 minutes until golden brown. Brush with melted butter before serving.
