  • 1/2 cup cold unsalted butter
  • 1/4 cup granulated sugar
  • 1 cup fresh blueberries
  • 1 tsp vanilla extract
  • 1 egg (for wash)
  • 1 cup powdered sugar

Instructions

  1. In a bowl, whisk together the flour and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough forms. Wrap in plastic wrap and chill for 30 minutes.
  2. For the filling, mix fresh blueberries, sugar, and vanilla extract in a separate bowl. Lightly mash some berries while leaving some whole for texture.
  3. On a floured surface, divide chilled dough into two portions and roll each into rectangles about 3×4 inches.
  4. Place rectangles on a baking sheet; spoon filling onto half of each rectangle. Cover with another rectangle of dough and seal edges using a fork.
  5. Preheat the oven to 375°F (190°C). Brush tops with beaten egg wash and cut slits for steam release. Bake for 20-25 minutes until golden brown.
