  • 2 tsp vanilla bean paste or extract
  • 1 tsp butter extract
  • 1/3 cup (56 g) butterscotch chips, melted and slightly cooled
  • 1/2 cup (120 ml) buttermilk, at room temperature
  • 1 3/4 cups (219 g) all-purpose flour, spooned and leveled then sifted
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups (336 g) unsalted butter, softened (for buttercream)
  • 1 cup (170 g) butterscotch chips, melted and slightly cooled (for buttercream)
  • 2 1/4 cups (290 g) powdered sugar, measured then sifted (for buttercream)
  • 3/4 tsp butter extract (for buttercream)
  • 1/2 tsp vanilla (for buttercream)
  • 1/4 cup (42 g) butterscotch chips (for ganache)
  • 1 tbsp heavy cream (for ganache)
  • 1/2 tbsp honey (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla bean paste and butter extract.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture along with buttermilk and melted butterscotch chips until just combined.
  4. Spoon batter into liners until two-thirds full and bake for about 15 minutes or until a toothpick comes out clean. Cool on a wire rack.
  5. For the frosting, beat softened butter in a stand mixer until creamy. Gradually add melted butterscotch chips and powdered sugar until smooth; stir in additional extracts.
  6. Frost cooled cupcakes with the butterscotch buttercream and drizzle with prepared ganache made from butterscotch chips, cream, and honey.
