  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1 teaspoon dijon mustard
  • 1 large block Halloumi cheese (approximately 1 cup)
  • 6 cups mixed greens
  • 1 cup halved cherry tomatoes
  • 1 cup sliced cucumbers
  • 1/2 red onion, thinly sliced

Instructions

  1. In a mixing bowl, combine the chickpeas with olive oil, salt, garlic powder, and smoked paprika. Toss until well coated.
  2. Heat a skillet over medium heat. Add the seasoned chickpeas and cook for about 5-7 minutes until they are slightly crispy. Stir occasionally to prevent sticking.
  3. In another small bowl, whisk together olive oil, red apple vinegar, dried basil, salt, and dijon mustard until fully combined. Set aside.
  4. Slice the Halloumi into thick pieces. In your skillet (or on a grill pan), cook them over medium heat for about 2-3 minutes on each side until golden brown.
  5. In a large bowl, combine mixed greens, cherry tomatoes, cucumbers, red onion, and crispy chickpeas. Drizzle with dressing and toss gently to combine.
