  • 1 pound ground beef
  • 1 small onion (chopped)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup water
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 2 teaspoons Mexican oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • cooking spray
  • 6 large flour tortillas
  • 1 ½ cups shredded Mexican cheese blend
  • 1 ½ cups cooked rice
  • 1 (15-ounce) can black beans (rinsed and drained)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and chopped onion; season with salt and pepper. Cook until the beef is browned.
  2. Stir in water, tomato paste, chili powder, Mexican oregano, garlic powder, and cumin. Cook on medium-low until thickened (3–5 minutes).
  3. On a tortilla, layer ¼ cup cheese, ¼ cup rice, ½ cup beef mixture, and ¼ cup black beans.
  4. Roll tightly and secure by folding in the sides.
  5. Sear burritos seam-side down in the skillet sprayed with cooking spray until golden brown on all sides.
  6. Serve warm with your choice of toppings.
