  • 2 heads Romaine lettuce
  • 8 oz. rotisserie chicken breast meat
  • 4 oz. goat cheese
  • 1 cup red cabbage, thinly sliced
  • ½ cup pecans, chopped
  • ½ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 2 T. fresh lime juice
  • 1 t. Dijon mustard
  • 1 clove garlic, finely minced
  • 2 t. honey
  • salt and pepper to taste

Instructions

  1. Preheat your oven to broil.
  2. Halve the romaine heads and arrange them on a baking sheet lined with parchment paper. Brush with olive oil and season with salt and pepper.
  3. Broil for about 2-3 minutes until golden brown; watch carefully.
  4. In a glass bowl, whisk together all vinaigrette ingredients and let sit for at least 30 minutes.
  5. On plates, serve half a browned romaine head topped with chicken, goat cheese, cabbage, and pecans.
  6. Drizzle with vinaigrette before serving.
