  • 4 large flour tortillas
  • 1 cup shredded mozzarella or provolone cheese
  • ½ cup crumbled feta cheese
  • 1 small zucchini, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • ½ small red onion, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp sun-dried tomatoes, chopped
  • 2 tbsp Kalamata olives, sliced
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • Optional: Fresh spinach or arugula

Instructions

  1. 1. Preheat a skillet over medium heat.
  2. 2. Sauté the zucchini, bell pepper, and onion in olive oil seasoning with salt, pepper, and oregano for 3–4 minutes until slightly softened.
  3. 3. On one tortilla in the skillet, sprinkle half of the mozzarella cheese.
  4. 4. Layer on the sautéed vegetables, sun-dried tomatoes, olives, feta cheese, and optional greens.
  5. 5. Add the remaining mozzarella on top and cover with another tortilla.
  6. 6. Cook each side for 2–3 minutes until golden brown and cheese is melted.
  7. 7. Slice into wedges and serve warm.
