  • 1 large chicken breast
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp olive oil (for fries)
  • 1/2 tsp smoked paprika
  • Juice of 1/2 lime
  • 1/2 avocado (for salad)
  • 1/4 small red onion

Instructions

  1. Preheat the oven to 200C (400F).
  2. Toss sweet potato wedges in olive oil, smoked paprika, and salt; spread on a baking sheet.
  3. Bake for 20–25 minutes until golden brown.
  4. Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper; grill for 6–7 minutes per side until cooked through.
  5. Mash avocado with lime juice, salt, and pepper for guacamole.
  6. Combine cherry tomatoes, diced avocado, sliced onion, olive oil, salt, and pepper in a bowl for salad.
  7. Assemble by layering sweet potato fries in bowls followed by sliced chicken, guacamole, and salad.
