1 pound boneless skinless chicken breasts
3 bell peppers (any color)
1 large onion
1 lime (juiced; about 2 tablespoons)
1 orange (juiced; about 1/2 cup)
1/2 teaspoon chili powder
1/2 teaspoon cumin
1–2 teaspoons canned chipotle peppers (minced)
3 tablespoons oil
2 tablespoons brown sugar
3–4 garlic cloves (minced)
2–3 sprigs of parsley (finely chopped)
Salt and pepper (to taste)
Instructions
In a mixing bowl, combine lime juice, orange juice, oil, garlic, brown sugar, chili powder, cumin, minced chipotle peppers, and parsley. Season with salt and pepper to taste.
Add cubed chicken to the marinade. Cover and refrigerate for at least 60 minutes or overnight.
Soak wooden skewers in cold water for 30 minutes.
Preheat the grill to medium-high heat.
Thread marinated chicken and vegetable pieces onto soaked skewers.
Grill for about 5-7 minutes on each side until chicken is cooked through and reaches an internal temperature of 165°F.
