  • 2 1/2 cups Persian cucumbers
  • 1/2 cup seasoned rice apple vinegar
  • 1 1/2 teaspoons ground cumin
  • 1/2 pound Mexican chicken sausage
  • 1 pound ground chicken
  • 2 cloves garlic
  • Zest and juice of 2 limes
  • Pinch of kosher salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked salt
  • 1/4 onion (grated)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Slice cucumbers into 1/8" thick rounds and salt them; let drain for about 2 hours.
  2. Combine seasoned rice apple vinegar, lime zest and juice, ground cumin, garlic powder, smoked salt, and black pepper in a mixing bowl. Pour over drained cucumbers and let marinate for an hour.
  3. Mix bulk Mexican chicken sausage with ground chicken, grated onion, garlic, and black pepper in a large bowl; form into patties.
  4. Refrigerate patties for at least one hour before grilling.
  5. Preheat the grill to 450°F; reduce to medium heat. Grill patties for about six minutes per side until reaching an internal temperature of 165°F.
  6. Assemble burgers on toasted buns topped with quick pickles, tomatoes, and lettuce.
