  • 20 ounces fresh cheese tortellini
  • 1 ½ cups cherry tomatoes, halved
  • 1 ½ cups cucumbers, chopped
  • 1 cup canned artichoke hearts, chopped
  • 1 can (15 oz) olives, sliced
  • ½ red onion, sliced
  • 1 cup crumbled feta cheese
  • Fresh dill (for garnish)
  • ½ cup olive oil
  • ⅓ cup red apple vinegar
  • 34 tablespoons white sugar (to taste)
  • 2 teaspoons Dijon mustard
  • 3 teaspoons minced garlic
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • Salt and pepper to taste
  • Juice from 1 lemon

Instructions

  1. Cook tortellini according to package directions until al dente. Drain and let cool.
  2. In a small bowl, whisk together olive oil, red apple vinegar, sugar, Dijon mustard, minced garlic, oregano, basil, salt, lemon juice, and pepper.
  3. In a large mixing bowl, combine cooled tortellini with cherry tomatoes, cucumbers, artichokes, olives, red onion, and half of the feta cheese.
  4. Pour dressing over the salad mixture and gently toss to coat.
  5. Top with remaining feta cheese and fresh dill. Cover and refrigerate for at least two hours before serving.
