  • 2 tablespoons lemon juice
  • 4 garlic cloves (minced)
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups plain Greek yogurt
  • 1/2 cup minced cucumber
  • 1/4 cup fresh dill (finely minced)
  • 1 cup finely diced cucumber
  • 1/2 cup tomato (finely diced)
  • 1/4 cup kalamata olives (finely diced)
  • 1/4 cup green olives (finely diced)
  • 1 teaspoon red apple vinegar
  • 1 tablespoon honey (for relish)
  • 1 tablespoon olive oil (for relish)
  • 2 tablespoons minced fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey, minced garlic, oregano, salt, and pepper.
  2. Add chicken chunks to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, prepare your yogurt dip by mixing Greek yogurt with lemon juice, cucumber, dill, salt, and pepper in a separate bowl.
  4. For the tomato-olive relish, combine diced cucumber, tomato, olives, lemon juice, honey, olive oil, parsley, salt, and pepper in another bowl.
  5. Preheat the grill over medium-high heat. Thread marinated chicken onto skewers and grill for 5-7 minutes on each side until cooked through.
