  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour (gluten-free if needed)
  • 1 teaspoon salt
  • 1 Tablespoon ground cinnamon
  • 2 teaspoons ground ginger
  • 1/4 teaspoon ground nutmeg
  • 4 packages cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup light brown sugar (packed)
  • 1/2 cup sour cream (room temperature)
  • 6 large eggs (room temperature)
  • 1 Tablespoon vanilla bean paste or vanilla extract
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Make the gingerbread base by creaming butter and brown sugar, then mixing in molasses, eggs, and vanilla. Combine dry ingredients and blend until just mixed. Spread into the prepared pan.
  3. Bake the base for about 15 minutes until slightly firm. Allow it to cool.
  4. For the cheesecake layer, beat cream cheese until smooth, then add sugars, sour cream, eggs one at a time, vanilla, lemon juice, and salt.
  5. Pour the cheesecake mixture over the cooled gingerbread base.
